Puch help with installing new Cylinder Kit

Hi I have a 1980 Puch Sport MKII it has a ZA50 engine the bike is in great shape cometically but the engine was siezed. I was able to take apart the cylinder and piston from the crank shaft, I want to install a new kit. I looked on e-bay there are alot to choose from I just want something compatable with my bike the intake is 14mm with the stock bing carb and stock exhaust. Any recommendations also when installing the rings Ive read about ring gap what does this mean and how do you do it?
Also when I removed the filler plug on the crankcase a piece of rubber from the filler plug broke off and fell in can I just drain it then remove the philips screws and take the cover off to inspect and remove it. Also will I need a new gasket when reinstalling? Sorry for all the questions just want this to go smooth.
